A native of the Bray region in Normandy, Romain Matura has a taste for the terroir and a taste for travel.
His most memorable experiences are undoubtedly his beginnings with Michel GUERARD*** in Eugénie les Bains, his stint with Stéphane CARRADE** in Pyla sur Mer, and his years with Pierre BERTRANET* in the Limousin region.
Building on his years of experience in Michelin-starred restaurants and upmarket hotels, Romain Matura takes up the position of Sous-Chef at Moulin de la Gorce in Haute-Vienne in 2020, and takes charge of Mémoire at La Borde en Sologne - Château & Spa in March 2022.
